Agnostic means (in the broadest sense) "unable to know". I'm not sure how, when applied to language it becomes equal to "language independent". "Language agnostic" would mean "unable to know any language". This had doubtful meaning.

Well, dictionaries also define "agnostic" as "One who is doubtful or noncommittal about something." And really, regardless of how "agnostic" is used outside of the tech world, it has become commonly used to mean something new within the tech world (search for "Language Agnostic" (with quotes) on Google). I suppose we could say "Language Independent" instead, but I don't think that conveys they same meaning. "Language Independent" would suggest something is separate from language, whereas "Language Agnostic" would suggest something that deals with language, but the specific language used is unknown and/or irrelevant.
